What is a Mimosa?

This co*cktail is traditionally made with champagne and fresh orange juice, but this is my holiday twist on the classic mimosa recipe. Normally, you don’t put ice cubes into a mimosa but trust me on this one. As you sip on your champagne or cider, the mistletoe ice cube will slowly melt and the juice will infuse into your drink.

Ingredients for Mistletoe Mimosas & Mocktails:

  • 1 cup of Fresh Cranberries: These add a festive pop of red.
  • 6 Sprigs of Rosemary:
  • 1/2 cupcranberry juice co*cktail
  • 1/2 cup apple juice
  • 1 bottle (750 ml) of chilled Champagne, Prosecco, or Cava. For the Mocktail version, useSparkling Apple Cider or Ginger Ale.

How to make a Mistletoe Mimosa Ice Cube:

  1. Add about 12 cranberries into each ice cube mold. I did 12 cranberries to symbolize the 12 days of Christmas, but you can add as many as you like.
  2. Pour cranberry juice into each mold to the halfway mark, then top it off with apple juice. Note: Do not fill the ice mold all the way to the top because the liquid will expand once it’s frozen.
  3. Stick a sprig of rosemary into each cube. Carefully transport the ice mold to the freezer, and leave it overnight until they’re frozen solid.
  4. When you’re ready to serve the drinks, carefully push the mistletoe cubes out and place them inco*cktail glasses.
  5. Pour champagne (or sparkling apple cider) on top and enjoy! Happy holidays!

Storage:

The Ice cubes can last in the freezer for about 1 week. Note that the rosemary will wilt over time in the freezer so it’s best to serve these ice cubes within a couple of days of making them.

    Delicious and super easy. Will be on my annual holiday recipe list. It was a crowd pleaser. Sprig of rosemary was great add for the aroma! Note to self don’t taste the cranberry because very tart 😂. I used frozen cranberries.
